My favorite Christmas cookies are Butter Spritz. I love their uncomplicated flavor, which makes a perfect dunking cookie. This is the recipe I have been using for many years, which makes a tried and true cookie.
2 sticks of softened, unsalted butter
2 c confectioner's sugar
1 t vanilla extract
1/2 t almond or lemon extract
1 large egg, room temperature
2 1/4 c all purpose flour
1 t baking powder
sprinkles for garnish
Cookie press
Preheat oven to 350. Beat the butter and sugar until light and fluffy, about 5 minutes. Add extracts and egg and beat to incorporate. The mixture may look separated. Stir together the flour and baking powder and add to the creamed mixture a bit at a time. Mix until combined.
Fill your cookie press and press cookies onto an ungreased cookie sheet. Top with sprinkles and bake for 8 minutes, until firm but not browning. Allow to cool for a few minutes then remove to a rack and allow to thoroughly cool.
These keep well in the pantry in tupperware and they freeze very well.
OH! I remember these tasty little gems, but it has been years since I have both made them and eaten them. In fact, I believe I gave my press to my oldest daughter many years ago.
