Low Carb Shortbread Cookie

Even during the holidays, it is important for me to watch my carb intake.  It's so hard to find treats that feel like a treat, but these shortbread cookies really do!  It's a perfect low carb cookie, for your favorite diabetic or keto lifestyle!




This shortbread has all the desirables for a delicious cookie: butter, almond extract, and sweetener!  I just happen to use Allulose as the sweetener.  It's a little less sweet than regular sugar, so you can add about 1/3 more to get the full sweetness of sugar.  In this recipe, I have already calculated for that difference.

The recipe has only four ingredients, and takes about 10 minutes to prepare.  Good quality butter, blanched almond flour, Allulose, and almond extract.  I like the almond extract better than vanilla, it makes the cookie taste all the more special!




Tricks to these cookies are: high-quality, salted butter, softened ahead of time.  The butter is key.  For a great cookie don't substitute margarine.  Use fine-milled almond flour.  It's important for the texture of the cookie. I like almond extract, but you can use vanilla, and if you do, I highly recommend Penzey's Double Vanilla for this cookie.

Low Carb Shortbread Cookies

a delicious shortbread cookie perfect for those following a low carb lifestyle.

Ingredients

  • 2 1/2 c blanched almond flour
  • 6 T softened butter
  • 1/3 c allulose
  • 1 t almond extract

Instructions

  1. Beat allulose and butter until fluffy but do not overbeat it.
  2. Add almond extract and stir to incorporate.
  3. Add in flour 1/2 c at a time, stir to incorporate but not too long.  Continue until all the flour is mixed in.  Scoop small balls of dough onto a cookie sheet lined with parchment paper.
  4. Bake at 350 until edges appear golden brown.  Watch after 5 minutes as the cookies will brown rapidly.  My cookies usually bake for 8 minutes.
  5. Let cool completely on cookie sheet.  Handling them too much will break the dough apart.
